Tasty Parmesan and Herb Muffins

I love muffins. In the past I would make these and serve them with Pasta dishes. This is an easy, quick recipe that takes little effort and minimal clean up.

2 3/4 Cups of Flour
1 Tablespoon Baking Powder
1 Teaspoon Baking Soda
1 Teaspoon Salt
1/2 Teaspoon of Fresh Ground Pepper
1/3 Cup of Grated Parmesan Cheese
2 Teaspoons of Each:
Rosemary
Crushed Garlic
Oregano
Dill

3/4 Cup of Buttermilk
3/4 Cup of Milk
1/2 Cup Sour Cream
3 Eggs
3 Tablespoons Oil

Preheat Oven to 375°

Line muffin pan with muffin papers and coat them with oil (or the batter/muffin will stick to the paper when cooked)

Combine Flour, Parmesan Cheese, Salt, Baking Soda/Powder and Herbs. Mix Well.

Add wet ingredients to the dry and mix well.

Bake for 20 minutes or until golden colored and Inserted in muffin comes out clean.

I use fresh herbs (not dried) in this muffin recipe. The flavor is so much better than using dried herbs.

*Optional.
You can add cooked crumbled bacon to the muffin mix for a breakfast style muffin.
You can add 1/2 cup of Cheddar cheese to the mix for a more cheesy flavor.
